A delicious coconut cookie recipe from my Grandma!
If you are looking for a chocolate fix, dip half or all of the cookie in melted chocolate. Mmmmm
14 oz. sweetened shredded coconut
14 oz. sweetened condensed milk
1 tsp. vanilla
2 extra-large egg whites (room temp.)
1/4 tsp. salt
Preheat oven to 325.
Line a baking sheet with parchment paper.
Combine coconut, milk, and vanilla.
Whip egg whites and salt until soft peaks form, and fold into coconut mixture.
Drop spoonfuls onto parchment paper and flatten with back of a spoon.
Bake 25-30 minutes.
