Spinach & Artichoke Dip

Spinach and artichoke dip is one of my favorite dips! This is a really easy recipe that can be made quick for any get together.

Ingredients:
4 cups baby spinach
1-14 oz. can artichokes
1-8 oz. package of 1/3 less fat cream cheese
1/4 cup skim milk
1/4 cup mayonnaise
5 tablespoons shredded Parmesan cheese
2 cloves garlic
A few basil leaves

Directions:
Preheat oven to 350.
Spray a shallow 1-quart baking dish with Pam.
Place spinach in a microwaveable bowl and add 1/4 cup of water.
Microwave for 2 minutes.
Drain spinach with paper towels and chop.
In a large bowl beat cream cheese, mayo, Parmesan, milk, and basil in a bowl until combined.
Add chopped spinach and chopped artichokes.
Pour into greased dish and add a little
more shredded cheese to the top.
Bake for 25 minutes.
Serve with carrots or pita chips.

Buffalo Chicken Bacon Burgers

By now, I should probably have my own category on this blog called Buffalo Chicken Recipes, because I make everything buffalo chicken!! This is a really delicious dinner recipe to use of some ground chicken that you may have in your fridge, or to fill your buffalo chicken craving!

Ingredients:
1 lb. ground chicken
1/4 cup buffalo wing sauce
1/2 cup shredded Parmesan cheese
Salt & pepper
4 slices of bacon
4 slices sharp cheddar cheese
4 hamburger buns
Buffalo ranch dressing

Directions:
Cook bacon over medium-high heat in a non-stick skillet.
Let cool and drain on a folded paper towel.
Mix ground chicken, salt, pepper, buffalo wing sauce, and Parmesan in a large bowl with your hands. (Gets messy, but it’s fun.)
Form 4 patties with ground chicken mixture.
*Warning* Patties are a very odd orange color due to the hot sauce, and can seem very mushy. They will be fine once you cook them and the sauce absorbs, and they will turn to a normal
cooked chicken color!!! (I refrigerated my patties for about 10 minutes to firm them up a bit but you don’t have to.)

Place patties on non-stick pan on medium-low heat and cook for 8-10 minutes, flipping halfway through.
In the last minute or so, top each burger with a slice of cheddar cheese.
Once cheese is melted, add bacon and place each burger on a bottom bun.
Drizzle some buffalo ranch on top and top with the other half of the bun!
Serve with celery sticks 🙂

Pretzel, Chocolate Chip, Peanut Butter Chip Cookies

My friend Lauren and I made these tonight and even the batter was insanely delicious!! These cookies are the perfect combination of salty and sweet, a combo which I learned to love when my Auntie A showed me chocolate covered pretzels, so I know she will enjoy this post!!

Ingredients:
1 1/2 cups flour
1/2 tsp. salt
1/4 tsp. baking soda
1 stick of butter, room temp
1 egg beaten
1/2 cup brown sugar
1/3 cup sugar
1 tsp. vanilla
1 cup chocolate chips
1/2 cup peanut butter chips
1/2 cup pieces of pretzels

Directions:
In a medium bowl combine flour, salt, an baking soda.
In a large bowl cream butter and both sugars for 2-3 minutes.
Add beaten egg and vanilla to sugar mixture and mix to combine.
Gradually add in flour mixture until completely incorporated.
Fold in chocolate chips, peanut butter chips, and broken pieces of pretzel.
Cover bowl of dough with plastic wrap and refrigerate 1 hour.
When ready to bake, preheat oven to 350.
Place rounded teaspoonfuls of dough onto baking sheet and flatten slightly with thumb.
Bake for 12-13 minutes.
Yields 24 cookies.

Egg Salad/ How To Hard Boil Eggs

We always have a lot of eggs in my house, so every once in a while I like to hard boil some and save them for lunch or make some egg salad. In this post, I will simply show you the easiest way to hard boil eggs, and how to make a delicious egg salad afterwards.

How To Hard Boil Eggs:
1. Place your eggs at the bottom of a pot in a single layer.
2. Fill the pot (over the eggs) with enough water to cover the eggs by 1 inch.

3. Place pot over medium-high heat, and let sit until water boils.

4. Once water boils, immediately turn off the heat and place a cover over your pot.

5. Let sit with heat off and covered for 15 minutes. Do not take the cover off before the 15 minutes is up because that will allow the heat to escape.
6. After 15 minutes, transfer eggs to an ice bath to quickly cool them after cooking. (Add ice to cold water in a separate bowl).

7. Refridgerate until ready to eat, eat immediately, or make some egg salad!

Egg Salad Recipe:

Ingredients:
4 Hard Boiled Eggs, peeled and diced
2 tablespoons light mayonnaise
1/2 tablespoon Dijon mustard
4 scallions, diced
1 stick celery, diced
Sea salt
Black pepper

Directions:
In a bowl, mix together mayo, mustard, scallions, celery, salt, and pepper.
Add diced eggs.
Taste test, and add more salt and pepper to your liking.
Garnish with extra diced scallions.

Cupcakes For Two

As I was searching through pinterest I found an adorable and quick recipe for cupcakes for two!
I don’t know about you, but I’m always in the mood for dessert, and a simple one! These cupcakes take less than 5 minutes to prepare and 10 minutes to bake, and it makes a small portion of two! One for yourself, and one for someone else 🙂
Or both for you….. 😉
These are quick, easy, and yummy vanilla cupcakes.
Just use a simple whipped cream for a topping, or even sprinkle confectioners sugar.

Ingredients:
1 egg white
2 tablespoons sugar
1 teaspoon vanilla
1/4 cup flour
1/4 teaspoon baking powder
Pinch of salt
1 1/2 tablespoons milk
Whipped Cream- optional
Shredded Coconut- optional

Directions:
Preheat oven to 350.
Place two cupcake liners in the well of a muffin tray.
In a medium bowl whisk egg white and salt.
Add vanilla and salt and mix to combine.
Add flour and baking and mix.
Add the milk and finish mixing.
Pour evenly into two cupcake liners.
Bake for 10-12 minutes.
Top with whipped cream and shredded coconut.
