Almond Butter Pancakes

This is my first post in almost two months, ever since moving into school I have been so busy and haven’t had a lot of time to try out new recipes, but here is one that I adapted from:
They are extremely dense and filling, I used a mini pancake pan and only ate 1.5 pancakes and I was stuffed! Enjoy!

1 cup almond meal
1/4 cup almond butter
3 eggs
1/4 cup unsweetened coconut

Place pan over medium heat and grease with coconut oil.
Mix all ingredients thoroughly.
Spoon batter onto pan and press down lightly with the back of a spoon.
Cool until brown & top with desired toppings.



Paleo Chocolate Chip Coconut Flour Pancakes

I decided to make a healthier alternative of chocolate chip pancakes for the girls I babysat this morning. This recipe uses coconut flour instead of white flour, and raw honey instead of sugar. I topped them with butter and raw maple syrup! I was surprised at how delicious they were because I was afraid they would taste a little dry or bland, but the dark chocolate chips and raw maple syrup made them so tasty!

4 eggs
1/2 cup coconut flour
1 tsp. baking soda
1 cup coconut milk
1/2 tsp. sea salt
1 tablespoon raw honey
2 tsp. pure vanilla extract
1/4 cup dark chocolate chips
Butter & raw maple syrup for topping

In a small bowl whisk eggs until frothy. Add milk, vanilla, and honey and mix.
In another bowl combine flour, baking soda and salt.
Add wet ingredients to dry ingredients and mix.
Place a large pan on the stove and heat to medium-low heat.
Add butter to pan and then add a few tablespoons of batter to the pan and cook for 5 ish minutes.
Then flip an cook for two more.
Repeat with remaining batter.
Serve with grass-fed butter and and raw maple syrup.


Paleo Scrambled Eggs with Ham and Scallions

Today is Day 1 of my Paleo challenge!! I have decided to try and have a Paleo diet at least during the week from now on. Eventually I will try and continue it on weekends. For anyone who is unfamiliar with the Paleo lifestyle it is often called “The Caveman Diet”. Without going to far into it, it basically is a lifestyle of eating no: grains, dairy, legumes, potatoes, sugar, alcohol, and “fake” foods.
But you can eat as much meat, veggies, and fruits as you like!
Today for my first paleo meal I made delicious scrambled eggs and I am still full 4 hours later!!
Tell me what you think of the Paleo diet.

2 eggs
1 teaspoon coconut oil
2 slices deli ham, cut up
2 scallions, diced
Sea salt
Black pepper

Over medium-low heat add coconut oil to your pan.
Let it get hot and add your ham and scallions.
Cook for about 2 minutes then crack two eggs into your pan.
Cook for about 1 minute and then with a rubber spatula, scramble the eggs.
Cook until done, turn off heat and add salt and pepper and mix.
Transfer to a plate and enjoy!
I don’t even miss the butter that I used to cook my eggs with, coconut oil is delicious!
