Paleo Banana Chocolate Chip Muffins

Craving chocolate chip banana bread? Make these moist, delicious muffins!

Ingredients:
1/2 cup coconut flour
1/2 tsp salt
1/2 tsp baking soda
6 eggs
1 banana
1/2 cup coconut milk (canned)
1/4 cup coconut oil
5 tblsp dark chocolate chips

Directions:
Preheat oven to 350.
Line 12 muffin tins with paper liners and grease with coconut oil.
Mix flour, salt, and baking soda in a small bowl.
In a medium bowl beat the eggs, oil, milk, and smashed banana.
Add dry ingredients to wet ingredients and mix well.
Fold in chocolate chips.
Pour batter into greased paper liners and bake for 20 minutes.

Paleo Chocolate, Coconut, Banana Mousse

This is a dessert that you can whip up in minutes. It is the consistency of a thick pudding when you first make it, but as it sets in the fridge it turns into a decadent, creamy mousse! It tastes just like your eating a restaurant mousse made with lots of heavy cream and sugar but this recipe has none of that!!!

Ingredients:
1 medium banana
2 tablespoons almond butter
2 tablespoon cacao powder
1/4 cup melted coconut oil
1 teaspoon pure vanilla extract

Directions:
In a bowl mash the banana with a fork.
Mix in the almond butter.
Whisk in he coconut oil and vanilla until smooth.
Add cacao powder and whisk until combined.
Place in refrigerator to thicken up for at least 1/2 an hour.
Place 1/4 cup of pudding into ramekins and top with fresh fruit and cinnamon.
(Tasted best with the strawberries).

Paleo Chocolate Chip Cookies

Was craving sweets so I decided to make some paleo cookies that I found on http://www.foodiefiasco.com

Ingredients:
6 tablespoons coconut flour
9 tablespoons unsweetened coconut milk
1 1/2 very ripe bananas, mashed
1/2 tsp. baking powder
Pinch of salt
1/2 tsp. pure vanilla extract
2 tablespoons dark chocolate chips

Directions:
Preheat oven to 350.
Line a cookie sheet with parchment paper.
Combine coconut flour, baking powder, and salt in a bowl.
In another bowl combine mashed banana and vanilla.
Add flour mixture to banana mixture and stir until combined.
Add coconut milk one tablespoon at a time and mix after each addition.
Drop by tablespoon full onto parchment paper and bake for 20-25 minutes.

Paleo Chocolate Chip Cake

Yesterday was my cousin Max’s 23rd birthday, and since he has been trying to eat healthier I decided to make him a Paleo birthday cake! It was sooo delicious and everyone loved it!

Ingredients:
1/2 cup coconut flour
1/2 cup coconut oil, melted
1/2 cup honey
6 eggs
1/2 cup extra dark chocolate chips
1 tablespoon pure vanilla extract
1/4 tsp. sea salt
1/4 tsp. baking soda

Directions:
Preheat oven to 350.
Grease a cake pan with coconut oil (extra, not amount used in ingredients)
Mix coconut flour, baking soda, and sea salt in a medium bowl.
In a large bowl beat eggs, coconut oil, honey, and vanilla until pale yellow.
Fold in the chocolate chips.
Pour into greased cake pan.
Bake for 20-22 minutes.
Didn’t have time to get a good picture because everyone love the cake so much and kept wanting to cut a piece, but trust me, it’s delicious!
It tasted like a chocolate chip pancake 🙂

Paleo Double Chocolate Cakies

So today I decided to try my very first paleo treat! I love to bake, but my crossfit coach is trying to get me out of it since it uses so much flour and sugar! I found a recipe that looked very yummy from http://www.multiplydelicious.com for double chocolate cakies. They have the consistency of cake but are baked like cookies!
Are paleo desserts healthy?
No not necessarily…but they are a lot healthier than normal cookies!!
I don’t suggest you make a paleo dessert everyday, but when your craving a treat these will definitely fill that craving! Enjoy 🙂

Ingredients:
2 ripe bananas
2 tblsp almond butter
3 1/4 tsp unsweetened cocoa powder
2 tsp vanilla extract
1 tsp baking soda
1/4 tsp sea salt
1 1/4 cups almond flour
1/4 cup dark chocolate chips

Directions:
Preheat oven to 350.
Line a cookie sheet with parchment paper.
In a large bowl mash bananas with a hand mixer.
Add the next 5 ingredients and mix well.
Add the almond flour and mix.
Fold in the chocolate chips with a spoon.
Scoop tablespoons of batter onto parchment paper. (Should make about 12).
Bake for 15 minutes.
*Since these are cake-like cookies, refrigerate them after they cool. These cookies are even better the next day.
